I am currently attending a college here in China. However, I have been offered some interesting job opportunities. These jobs require that I have a resident visa. I have been told that I can't change from a student visa to a resident visa, while in mainland China. Is this accurate? If so, is Hong Kong an option for me? Now I am stressing out!=]

It is true, you cannot convert a study visa to work visa in China.
It is debatable if you can even do it in Hong Kong, alot of threads on this subject say that you are required to return to your home country to process your visa.

Correct, it is not possible to convert tourist, student or business visas to a work visa in China. While some people swear that they can get their z visa in Hong Kong, we've got mixed reports saying that 80% of those who applied in 2008-2009 were rejected and told that they must return to their home countries to process their visa. Additionally, it appears countries such as vietnam, korea, and thailand also cannot convert or process your visa unless you are a citizen of those countries. From our experience here in the USA, that appears to be factual as the US consulate will not process a visa for any non US resident unless they have a legal visa status.
